Kitchen and Housewares Reviews of All-Clad Master Chef 2 10-Inch Petite Braiser PanCustomer Review: very much all purpose Summary: 5 Stars
The shape and size of the pan itself is exactly the same as a 10-inch fry pan, just without the long handle. I have used it to braise, making paella and saute in it like a fry pan. Without the long handle that a fry pan has, of course it is not as convenient if you want to shake and stir. But this is my only All-Clad, my first trial piece. I love it. Planning to add more pieces to my collection. This Braiser Pan is beautiful to serve in it. Great heat conductivity and easy to clean. I was recommended the MC2 over all stainless steel by the shopkeeper because, if hand washing is not a chore for you, the outer layer in MC2 is thicker aluminum and thus heats slightly faster than Stainless steel.
Description of All-Clad Master Chef 2 10-Inch Petite Braiser PanPreparing cherry cobbler, paella, quail, and more is a breeze with All-Clad's braiser. Designed with a classical sloped shape, the pan is unsurpassed in aesthetics and in quality. Attractively designed and incredibly tough, this piece is constructed of three layers of metal; a brushed aluminum alloy beautifully complements the polished, 18/10 stainless steel interior that provides the ideal cooking surface that can even withstand tough use of metal utensils. These two layers combined with a pure aluminum core produce exemplary heat distribution while eliminating hot spots and create a light weight piece that can be used in the oven and under the broiler. The long, stay-cool handle is riveted to the side of the pan for extra strength and durability, and helps prevent burns. This handle is designed with a small indentation so it can be hung for convenient storage. Also included is a stainless steel lid that holds in heat and steam to create succulent and juicy meals. Producing some of the finest cookware in the nation, All-Clad has been featured in many high class and gourmet restaurants for its superior performance and aesthetically designed pieces crafted from American artists using the finest metals. A firm believer in quality over convenience, All-Clad's metals are formulated and bonded with cooking performance in mind, and are combined with stunning designs to provide you with the best cooking experience possible. The second generation of All-Clad's Master Chef line (MC2), this cookware combines brushed aluminum with stainless-steel accents for a contemporary look. Like All-Clad's other renowned cookware collections, Master Chef provides serious and professional cooks with all the virtues that make All-Clad's worldwide reputation unsurpassed. Key to its high performance is a three-ply, bonded construction. Sandwiched between the exterior and an 18/10 stainless-steel interior lies a thick core of pure aluminum that spreads heat evenly across the bottoms of pots and pans and all the way up the sides. The interior is highly polished, so it's stick- as well as corrosion-resistant. Handles, rivets, and tight-fitting lids are all gleaming stainless steel. This beautiful round braising pan illustrates the Master Chef line's stylish yet practical design. It's 10 inches in diameter and 2 inches deep and has a domed lid that makes it perfect for braising on the stovetop or in the oven. Without the lid, it's equally perfect for baking cherry cobbler, roasting quail, or browning cheese sauce on asparagus and then serving it at the table. Its polished 18/10 stainless-steel handles are riveted to the pan for strength and stay cool on the stovetop, but they won't be harmed by an oven's highest heat. Master Chef cookware carries a lifetime warranty against defects and should be hand washed. --Fred Brack
